We call cooking in the kitchen "mundane" merely because it is a small unimportant thing compared to our relationship with Christ... And we know you all would agree! =) So let's all be sure that Christ is with us in our kitchens today! - Ed.
Country Cabbage Soup

3 c. chicken broth
3 c. water
1 c. shredded pared carrots,
1/2 c. diced celery
1 medium potato, pared and diced
1/2 c, chopped onion
2 c. chopped, peeled tomatoes
1 1/2 tsp. salt
1 bay leaf
4 pepper corns
1/4 c. lemon juice
3 c. shredded cabbage
1 Tbs. vinegar
1 Tbs. sugar
Directions: In a large kettle combine all ingredients (except lemon juice and sugar). Simmer covered for one hour, stirring occasionally. Add lemon juice and sugar. -Makes two quarts- Serves 8-
The wonderful taste of homemade soup made with fresh ingredients is worth the time to prepare. Almost every fresh vegetable can be cooked into soup. Serve them with a lush green salad and warm bread for a light supper.
A green bean salad with thinly sliced onions using an Italian dressing or use 1/2 c. salad oil with 1/2 c. apple cider vinegar. (Whole beans are better for the salad.)

Turkey Cabbage Soup

An easy to make soup that is very tasty. Especially nice to make after canning time when home-canned green beans are available.
Add to large pot:
liquid of 2 quarts of green beans (home- canned are best)
1 quart of green beans with liquid
1 lb. of cooked ground turkey (seasoned with onion, garlic, and salt)
left-over rice
Simmer for 1/2 hour. Add:
1/2-1 head finely shredded cabbage
(add more liquid or seasonings to taste)
Serve with crackers.

Fiesta Bean Soup

6 cups water
6 low sodium beef-flavored bouillon cubes
1 LB extra lean ground beef
2 garlic cloves, minced
1 cup chopped green bell pepper
3 cups tomato juice
2 cups rinsed, drained, canned red kidney beans
2 cups frozen whole-kernel corn
1 teaspoon dried leaf basil
In a large soup pot, combine water and bouillon cubes. Bring to a boil over high heat; reduce heat until water barely simmers. Crush bouillon cubes with back of a spoon. Stir until bouillon cubes are completely dissolved; set aside. Meanwhile, in a heavy non-stick skillet or a skillet coated with non-stick vegetable spray, brown beef. Remove all but 1 tablespoon of drippings from the pan. Add garlic and bell pepper; saut_ 30 seconds. Spoon browned beef and saut_ed vegetables into bouillon mixture. Add tomato juice, beans, corn and basil. Bring to a boil over medium heat; reduce heat until mixture barely simmers. Cover; simmer 15 minutes. Serve hot, over cooked pasta. Can refrigerate up to 4 days. Each serving 240 calories and 8 grams fat. Makes 10 large servings.

The following two recipes are submitted by Sarah Rose:
Potato Soup
20-24 potatoes, peeled and cubed
2 medium onions, chopped
8 carrots, peeled and sliced in rounds
8 stalks of celery, sliced
6 cubes of vegetable bouillon (We use the brand Horga or Hiilgli from a health food store.)
1 1/2 Tbs. each Parsley and Basil (dried)
12 cups water
Put all ingredients in a large pot. Bring to a boil. Lower heat and cook for about 30 minutes or until vegetables are tender. Mash a little and serve! Excellent served with a fresh green salad, w.w. cornbread or w.w. biscuits.
We also make a Vegetable Soup by just altering the above recipe a bit. We put in a couple jars of canned tomatoes, not so many potatoes, and add any more vegetables we have on hand like: watercress, green beans, etc... and some crushed garlic.
This soup is more of a “special treat” as it has more canned foods than we would like. We usually eat more fresh vegetable soups:
"Therefore if thine enemy hunger, feed him; if he thirst, give him drink: for in so doing thou shalt heap coals of fire on his head." -Rom 12:20
Taco Soup
1 lb. ground turkey meat (opt.)
3 small onions, chopped
2 tsp. paprika
2 Tbs. chili powder
3 16 oz. cans cut corn (with liquid)
4 16 oz. cans kidney beans, drained and rinsed
3 28 oz. cans peeled, diced tomatoes
3 16 oz. cans tomato sauce
Brown turkey in saucepan, and put in large pot. Saute’ chopped onion in saucepan and add to pot. Stir in rest of ingredients. Bring to a boil. Lower heat and simmer for 25-30 minutes. Serve with tortilla chips.

Mealtime Episodes
My youngest brother, Caleb, has a limited
vocabulary. He can say such things as Mom, Dad, car, water, bird, and guck (for truck), etc.
One day when Mom was out, Caleb was sitting on Dad’s lap as he worked on the computer. Suddenly he said, “Mom.” After a little bit Dad asked him why he wanted Mom. Caleb smiled and replied, “Purse”. After our mom arrived back we found out that she keeps “crackers” in her purse! =) (This happened after I had fed him a whole graham cracker. I guess he knew he was not going to get any more from me.)

Have any of you ever seen a sleeve saver bib? They are wonderful! My aunt made my little brother a couple for his birthday this year. A sleeve saver bib is just a normal bib, except that there are sleeves to protect arms and clothes.
